The original recipe of Black Sea Menemen comes from the South Coast of Our Lovely Black Sea. On the South-West Coast a very similar dish is known as Mish-Mush but it includes white brine cheese and baked red bell pepper in ingredients and that’s why it has a different taste compared to Menemen.
Preparation stage of Black Sea Menemen is very simple. Vegetables need to be properly sliced and chopped.
Cooking stage of the dish is also simple. Onions with green bell pepper and sliced garlic cloves sauté in olive oil and for a few minutes at medium heat, then with added chopped tomatoes and salt for a couple of minutes more. Then broken eggs are added to the mix with ground black pepper and red hot chilli pepper flakes and cooked for 8-10 minutes at low heat under the lid. When ready immediately served with chopped parsley. This dish is vegetarian.
Black Sea Menemen should not be cooked in advance. Traditionally it is served hot immediately after cooking and it goes well with the glass of wine, ayran or Black Sea Tea. Most often it is eaten by using a slice of fresh white bread instead of fork or spoon and straight from the pan without even putting the dish on a plate.
