Black Sea Choban Salat is a light, easy to make, and incredibly refreshing salad, one of the most popular in the Black Sea Cuisine. It is popular around all the coasts of Our Lovely Sea.

The key thing is to make sure you get great tomatoes, the sweetest and tastiest you can find.

Course – Salad / Side dish

Serves 4

Preparation time – 20 minutes

2 tomatoes finely chopped

1 onion finely sliced

2 cucumbers peeled off and finely chopped

2 green peppers, seeds off and finely chopped

½ bunch flat-leaf parsley chopped

3-4 tablespoons of extra virgin olive oil

Juice of 1-1 ½ lemons

Salt and Pepper

Preparation of the dish is simple. Put all the chopped vegetables together with the parsley in a bowl and mix well. Put the mix into the fridge and chill down a little.

Make a dressing by blending together olive oil, lemon juice, salt and pepper. Be sure you have a very good quality olive oil. It should be fruity and mild in taste but not bitter.

Just before serving, season the salad with the dressing and mix thoroughly. Add a little extra olive oil if needed for better taste. Use a slice of fresh bread to dip it into the juice in the bottom of the bowl.

Black Sea Choban Salat should not be prepared in advance. Traditionally it is served cold immediately after seasoning.
