Black Sea Choban Salat is one of the most simple and healthy salads of Black Sea Cuisine and can be described as a Mixed Salad. This dish is served cold for lunch or dinner mostly during hot seasons.

Black Sea Choban Salat consist of very healthy ingredients: tomatoes, cucumbers, green bell peppers, onions and parsley, olive oil, fresh lemon juice, salt and pepper.

If Black Sea Choban Salat is served as a side dish it is recommended to serve with Black Sea Stone Oven Bread and Black Sea Kiofte.

The name of this dish comes from the Turkish word «Coban», which means in English «Shepherd» or «Cowboy».

This is a light, easy to make, and incredibly refreshing salad, one of the most popular in the Black Sea Cuisine.

Preparation of the dish is simple. Put all the chopped vegetables together with the parsley in a bowl and mix well. Put the mix into the fridge and chill down a little.

Make a dressing by blending together olive oil, lemon juice, salt and pepper. Be sure you have a very good quality olive oil. It should be fruity and mild in taste but not bitter.

Just before serving, season the salad with the dressing and mix thoroughly. Add a little extra olive oil if needed for better taste. Use a slice of fresh bread to dip it into the juice in the bottom of the bowl.


Black Sea Choban Salat should not be prepared in advance. Traditionally it is served cold immediately after seasoning.
