Preparation of the dish is simple. Put all the chopped vegetables together with the parsley in a bowl and mix well. Put the mix into the fridge and chill down a little.
Make a dressing by blending together olive oil, lemon juice, salt and pepper. Be sure you have a very good quality olive oil. It should be fruity and mild in taste but not bitter.
Just before serving, season the salad with the dressing and mix thoroughly. Add a little extra olive oil if needed for better taste. Use a slice of fresh bread to dip it into the juice in the bottom of the bowl.
