Black Sea Tarator consist of basic but very healthy ingredients – plain cold yoghurt, cold water, cold peeled and diced cucumbers, finely chopped garlic cloves, crushed walnuts, sea salt, olive oil, drop of vinegar and finely chopped fresh dill
The original recipe of Black Sea Tarator comes from the South-West Coast of Our Lovely Sea. At the South Coast a similar dish is known as Dzadzik, which originally came from Greece.
Preparation stage of Black Sea Tarator is extremely simple. Cold cucumbers need to be peeled off and finely diced, cold plain yoghurt and cold water – beat together, garlic cloves with walnuts and sea salt with little olive oil – crushed together in the mortar, fresh dill – finely chopped.
There is no cooking stage of this dish. Just mix all ingredients in a large bowl, add water-diluted yoghurt and stir well. Add finely chopped fresh dill and stir a bit more.
Black Sea Tarator should be well chilled at serving and not prepared for a long time in advance. Traditionally it served cold immediately after preparation and it refreshed eaters at hot lunch time.
