The recipe of Black Sea Giozleme is very simple but needs to be cooked carefully and in the proper way. This recipe is with minced meat and cheese fillings.

2.5 cups flour

1 cup water

150 gr ground or minced beef

150 g fresh cheese «pasta filata» type grated

1 onion grated

10 pcs fresh parsley leaves finely chopped

1/2 teaspoon ground black pepper

3 teaspoon salt

2 tbsp butter

The dough is made from only flour, salt, and water. For making dough combine flour, water and salt in a large bowl and mix them well. Close the bowl top with a wet cloth or towel and let it rest for about 20 minutes. For preparing the filling combine and mix well the minced beef,  grated fresh cheese «pasta filata» type, grated onion, finely chopped parsley leaves, ground black pepper, salt.

Cooking this dish is very easy but needs to be done carefully. First separate the dough into 8 equal small balls and roll out each with a thin rolling pin until it gets a 3 mm thin round shape with about 40 cm in diameter. Add a big spoon of the filling and spread it on the 20 cm in the center of the dough. Close the dough sides, top and bottom. Do the same with the remaining dough pieces.

Heat the flat top grill to medium heat. Put 2-4 closed dough with filling to the grill brushed in advance with the butter. Turn each piece every 30-40 seconds brushing the top side of the grilled dough with butter. Cook until both sides of the dough get golden. Serve immediately.

Traditionally Black Sea Giozleme is served and consumed hot and eaten with hands. It goes well with the glass of Black Sea Ayran or cup of Black Sea Tea or mug of Beer.
