The biological name of this fish is the Black Sea Barbun (Mullus barbatus ponticus Essipov, 1927). Surmullet name is well known at the South Coast of Our Lovely Sea but at the other Coasts this fish is more known by trade names – Barabulka or Sultanka.

Black Sea Barbun is marine bottom fish of the barabulian family, with an oblong, low, slightly laterally compressed body, covered with large and easily falling scales, slightly flattened head and bally at the lower part, and a chin with two long tendrils. The color of the back and sides is pinkish red.

The Black Sea Barbun has long been an important fishing species in the Black Sea basin. Traditional methods of its preparation are frying and grilling.
