6 eggs

1 onion chopped

3 tomatoes chopped

3 green bell peppers chopped

3 tbsp olive oil

3 clove garlic thin sliced

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon red hot chili pepper flakes

3-4 tbsp parsley finely chopped for final serving

Preparation stage of Black Sea Menemen is very simple. Vegetables need to be properly sliced and chopped.

Cooking stage of the dish is also simple. Heat olive oil in the pan, add capped onions with chopped green bell peppers and sliced garlic cloves. Sauté this mix for a few minutes at medium heat until onions soften. Add chopped tomatoes and salt and simmer for about 3  minutes with constantly stirring until tomatoes get softened. Add eggs to the mix with ground black pepper and red hot chilli pepper flakes on top of eggs and cook for 8-10 minutes at low heat under the lid. When ready immediately served with finely chopped parsley on top. This dish is vegetarian.

Black Sea Menemen should not be cooked in advance. Traditionally it is served hot immediately after cooking and it goes well with the glass of wine, Black Sea Ayran or Black Sea Tea. Most often it is eaten by using a slice of fresh white bread instead of fork or spoon and straight from the pan without even putting the dish on a plate.
