The original recipe of Black Sea Mish-Mash comes from the South-West Coast of Our Lovely Sea. On the South Coast a very similar dish is known as Menemen.

Preparation stage of Black Sea Mish-Mash is simple. Bell peppers need to be roasted, peeled off and cut in strips, tomatoes – peeled off and diced without the seeds,  onions – cut in half moon form, parsley – finely chopped.

Cooking stage of the dish is also simple. Onions saute in vegetable oil and butter for a couple of minutes at medium heat, then with added bell peppers strips and diced tomatoes. Crumbled white cheese joins the vegetable fried mix and is covered by stirred eggs at the last point. A little cooking together and immediately served with chopped parsley. This dish can be vegetarian if butter is removed from ingredients.

Black Sea Mish-Mash should not be cooked in advance. Traditionally it is served hot immediately after cooking and it goes well with the glass of wine, ayran or Black Sea Tea.
