2-3 onions, cut in half moon form
2-3 tomatoes, peeled off and diced without the seeds
5-6 roasted bell peppers, peeled off and cut in strips
150-200 g white brine cheese
3-4 tbsp butter
3-4 tbsp vegetable oil
3-4 tbsp parsley, finely chopped
Preparation stage of Black Sea Mish-Mash is simple. Bell peppers need to be in advance roasted, peeled off and cut in strips, tomatoes – peeled off and diced without the seeds, onions – cut in half moon sliced form, parsley – finely chopped.
Cooking stage of the dish is also simple. Heat the mix of butter and vegetable oil in a frying pan. Fry cut onions, stirring until they start to get lightly brown. Add the pepper strips and diced tomatoes. Stir until all the liquid evaporates. Add crumbled white brine cheese. Stir eggs with the fork, add salt and pour into fried vegetables. Leave the eggs a little time before mixing all the ingredients together. Mix should remain juicy at the final point of cooking. Sprinkle with the chopped parsley and immediately serve.
