Black Sea Dzadzik is one of the most simple and most healthier side dishes of Black Sea Cuisine and can be described as a Cold Yoghurt Sauce with Cucumbers and Garlic. This dish is served for lunch or dinner mostly at hot seasons as an appetiser/starter or commonly as a side dish.
Black Sea Dzadzik consist of very healthy ingredients: plain yoghurt, water, peeled and grated cucumbers, finely chopped garlic cloves, sea salt, finely chopped fresh dill and fresh mint.
The original recipe of Black Sea Dzadzik comes from the South Coast of Our Lovely Sea. At the South-West Coast a quite similar dish is known as Tarator. But Dzadzik is more dense than Tarator soup and does not include walnuts and vinegar.
Preparation stage of Black Sea Dzadzik is extremely simple. Cold cucumbers need to be peeled off and grated. Cold plain yoghurt and cold water needs to be mixed well together. Garlic cloves need to be crushed, fresh dill – finely chopped.
There is no cooking stage of this dish. Just mix all ingredients in a large bowl. Add finely chopped fresh dill and salt and stir well for more. Serve with a drop of olive oil and fresh mint.
Black Sea Dzadzik should be well chilled at serving and not prepared for a long time in advance. Traditionally it served cold immediately after preparation.
